Where to Get Legit Lobster Rolls in Denver
This LoHi spot is a delight
It may be called a “shack,” but there’s nothing run-down about the food at Maine Shack, which opened last summer.
This unpretentious, fast-casual seafood eatery is the brainchild of Drew Ryan, a Maine native who had the dream of bringing lobster rolls to our landlocked state. “I’ve lived in Tampa, NYC, L.A. and Denver, and I’ve never been happy with any of the lobster rolls,” he says. So, he partnered with longtime friend and Boston native John Caprio to bring this coastal treat to LoHi.
Both the décor and the main dish hail from his home state (lobsters are shipped three times a week from Greenhead Lobster in Stonington, Maine). Ryan offers four types of lobster rolls (my favorite is the Fancy, with cucumber, celery, herbs, lemon, mayo and bibb lettuce), as well as fried clams, steamers, scallops, clam chowder, lobster mac & cheese, and a delightful Old Orchard beet salad. “I wanted to bring an authentic lobster roll to Denver,” Ryan says. And for $24, you can get just that.
