Watermelon Mint Julep Ice Pops

Is there anything more fun than ice pops in the summertime? They are, without a doubt, one of the great things about summer. I mean, a hot day and these frozen watermelon treats? Perfection.

I know we still have a bit of time until summer is officially here, but we can all get a head start by making these yummy Watermelon Mint Julep Ice Pops. They’re so fun and refreshing; full of watermelon, strawberries, mint, lime, and yes, I totally snuck some bourbon in there, too. These guys are the ultimate five o’clock pick-me-up: healthy with a kick!

If you’re making these for the youngsters, or if you’d just prefer not to have the alcohol, the bourbon can easily be omitted. No big deal. Oh, and the best part about these pops? They are so easy! Just add all the ingredients to a blender or food processor, pour the mixture into ice-pop molds, and freeze. Done and done. Happy ice-pop-eating days!

WATERMELON MINT JULEP ICE POPS
Prep Time: 10 minutes
Total time 10 minutes + 5 hours to freeze
Makes: 12-18 pops 

Ingredients:

  • 5 cups cubed watermelon
  • 1 cup fresh strawberries, cored
  • 1/3 cup bourbon (omit to make a virgin version)
  • 1/4 cup agave nectar or honey
  • 2 tablespoons lime juice
  • 1/4 cup fresh mint

Directions:

Combine all ingredients in a blender or food processor and process until smooth.

Pour the mixture among 12-16 ice-pop molds. Place the molds in the freezer and freeze for 1 hour. Remove and insert ice-pop sticks. Return to the freezer and freeze until firm, about 4 hours. To remove the ice pops, run the mold under hot water for 10 seconds and then pull the pops out of the molds. Store in the freezer.
