Nosh: Rosenberg's Bagels
After 25 years of living in Colorado, I’ve finally found a bagel to rival those of my East Coast childhood. Crispy on the outside and chewy on the inside, Rosenberg’s Bagels offer absolutely nothing to kvetch about. Thanks to Joshua Pollack, a Jersey boy who wisely decided to open up a modern Jewish deli in Five Points, Denverites finally have real bagels (not just bread-with-a-hole-in-it versions sadly sold almost everywhere).
Pollack uses a reverse osmosis process that strips our Denver water of its mineral content, and then adds magnesium and calcium back in to replicate NYC water. And like any self-respecting bagel establishment, Rosenberg’s also offers in-house smoked fish. Rosenberg’s Bagels, Denver, rosenbergsbagels.com.
