Toro’s Chef Oscar Padilla’s Holiday Guacamole Recipe
Ingredients:
1.5 Avocado, cut in 1-to-2-inch cubes
1.5 Lemons
30 grams Cherry Tomatoes; cut in quarts
30 grams Sliced Sundried Apric
40 grams Roasted Yellow Beets;
20 grams Orange Segments
25 grams Goat Cheese
10 grams Toasted Pumpkin Seeds
15 grams Pomegranate Seeds
1 gram Chili Flakes (optional if you want some spice)
Salt to Taste
Process:
In a bowl mix the avocado cubes, cherry tomatoes, apricots, roasted beets, orange segments, and chili flakes (if desired). Add a dash of salt (to taste) and squeeze the lemon over the ingredients. Mix everything very well. When plating, add on top the goat cheese, pumpkin seeds, and pomegranate
