Guacamole With a Side of Cheer

Executive Chef Oscar Padilla of Toro Latin Kitchen & Lounge invites you to create a fine dining dish from the comforts of your home.

Not only does it taste great, but the cheery red and green ingredients match the spirit of the season. 

Toro’s Chef Oscar Padilla’s Holiday Guacamole Recipe 

Ingredients
1.5 Avocado, cut in 1-to-2-inch cubes
1.5 Lemons
30 grams Cherry Tomatoes; cut in quarts 
30 grams Sliced Sundried Apricots 
40 grams Roasted Yellow Beets; peeled and diced  
20 grams Orange Segments 
25 grams Goat Cheese 
10 grams Toasted Pumpkin Seeds 
15 grams Pomegranate Seeds 
1 gram Chili Flakes (optional if you want some spice) 
Salt to Taste  

Process:

In a bowl mix the avocado cubes, cherry tomatoes, apricots, roasted beets, orange segments, and chili flakes (if desired). Add a dash of salt (to taste) and squeeze the lemon over the ingredients. Mix everything very well. When plating, add on top the goat cheese, pumpkin seeds, and pomegranate seeds to garnish.
