We sat down with the beverage director behind Postino Wine Café to learn about the most popular pink drinks for cooling off this summer

When the weather is hot this summer, there’s no better way to find respite than with a cool glass of crisp rosé. We sat down with Brent Karlicek, beverage director and operating partner at Upward Projects, to learn about the most popular pink wine drinks served at Postino Wine Café in Denver’s LoHi neighborhood this season.
Postino specializes in serving unique and often exclusive wines to guests who can cozy up inside an intimate booth, settle in at the expansive indoor/outdoor bartop, sip in the sun on the oversized outdoor sofas or meet friends at the various communal tables, all while soaking in the vintage furnishings and colorful pop-culture artwork.
Created to be a casual, comfortable place for authentic connection, Postino pays homage to the Italian wine café through its atmosphere and beverage selection, which changes an evolves as many as three times a year.
“This summer we’re connecting our guests with rosé in a serious way,” notes Karlicek. “Of particular success for us right now is a sparkling rosé, from the northeast region of Spain.” This popular beverage is a blend of three varietals. Two are indigenous: Garnatxa and Trepat. The last is a Pinot Noir, an international varietal to add some elegance. Produced in the “method-traditionale,” the contact between the wine and the lees serves up a savory, nutty toasty quality. “It’s refreshing but layered and complex,” he notes. A fabulous rosé to treat your tastebuds this summer!
Another must-have rosé this summer at Postino is Alpina, a collaborative project from the Savoie region of France. It’s a blend of three grapes: Pinot Noir, Gamay, and Mondeuse. Karlicek says, “Reaction to this wine has been fantastic.” “What drew us to this collaboration was our love of a rosé that shows crunchy fruit notes, and saline minerality.” The Alpina rosé has a full texture that is followed up by an “electric acidity” that is so refreshing on these warmer days!
No matter where you are this summer, these rosés are the right way to refresh your palette. Postino, which earned a spot on Yelp’s Top 100 Places to Eat in the Country list, is open daily for lunch and dinner and serves brunch every weekend from a compact and craveable menu of bruschettas, from-scratch soups, salads and panini sandwiches.
