Eat at WYLD in Ritz-Carlton Bachelor Gulch

Four years after Spago closed its doors in Avon’s swanky Ritz-Carlton Bachelor Gulch, its replacement restaurant, WYLD, has finally found its groove. Under the care of executive chef Jasper Schneider, the space has been reinvented as a place for “earth-to-table” fine dining. The food incorporates Japanese and French influences, using hyper-seasonal ingredients. Schneider, who moved to Vail from the Caribbean, has been floored by the organic sourcing of ingredients in Colorado. “I couldn’t be happier here,” he says. “The mountains have given me a lot of inspiration and a different mind-set for hearty food with warmth.”

His latest menu features venison, wild king salmon, Wagyu short ribs, confit of octopus and a wide selection of root vegetables. For a splurge-worthy dinner, come in for white-and-black truffle season, starting in late November and featuring a nightly special driven around the mighty truffle. ritzcarlton.com
