Indulge at Lafayette-based Nova Chocolate

“Craft chocolate can be intellectually interesting, but it can also be too difficult in flavor, almost too complex,” says Andrew Starr, owner and chocolatier at Lafayette-based Nova Chocolate. When you’re craving a bite of balanced chocolate without all of the salts, nibs, and dried fruits, he’s your man.

Starr sources cacao beans from Nicaragua and Ecuador and pays serious attention to the sustainability of how the beans are grown, processed, and imported. Once it arrives in his Lafayette factory, he pours the chocolate bars and sells them in small stores such as Boulder’s Cured and Cured West, as well as Alfalfa’s and Natural Grocers. $6/bar,
